1 fresh pineapple peeled and cut into small chunks
¾ cup water
1 ¾ cup sugar
Juice of 2 limes
Cook the pineapple and water over medium heat until the pineapple softens. Add more water if needed.
Add the sugar and lime juice and cook until the syrup thickens and the pineapple is a light golden brown. This will take about 30 minutes. Cool and store in the refrigerator until ready to use.
