I like Ina Garten’s Shortbread Cookie recipe. Mine are round instead of rectangular and sprinkled with turbinado sugar. As in Ina Garten’s recipe I brush the cookies with dark chocolate and add even more flavor by sprinkling with chopped pecans or pistachios. Another option is to roll the cookies in melted chocolate and then in chopped almonds. See tempering chocolate before melting the chocolate for the topping.
