¼ cup olive oil
¼ cup red wine vinegar
½ teaspoon lime zest
1 tablespoon lime juice
1 teaspoon Dijon mustard
Salt and pepper to taste
Combine all ingredients in a jar with a tight lid and shake vigorously to emulsify. Use this to dress Chicken Street Taco Salad or your favorite salad.
