Peanut butter dip
⅓ cup peanut butter
1 tablespoon honey
1 tablespoon rice wine (Mirin)
1 tablespoon low sodium soy sauce
2 teaspoons ground ginger
½ teaspoon black pepper
⅛ teaspoon cayenne pepper
2 tablespoons water
Whisk all ingredients together until creamy. Whisk in more water as needed to achieve desired consistency. Place in a small bowl and serve with lettuce wraps as a dressing.
Hoisin sauce
4 tablespoons low sodium soy sauce
2 tablespoons peanut butter
1 tablespoon honey
2 teaspoons rice vinegar
⅛ teaspoon garlic powder
2 teaspoons sesame oil
20 drops hot sauce
⅛ teaspoon black pepper
Whisk all ingredients together until creamy and well blended. Set aside.
Beyond Beef Filling
1 tablespoon olive oil
1 pound Beyond Beef
2 cloves garlic, minced
1 medium onion, diced
1 tablespoon freshly grated ginger
2 – 3 carrots, peeled and diced
2 green onions, thinly sliced
Heat olive oil in a large cast iron skillet. Add Beyond Beef to the skillet and use a spatula to crumble the beef and stir. Cook for 7 minutes or until browned. Add the garlic, onion, ginger and carrots. Cook approximately 3 minutes or until the onions have softened. Add the Hoisin sauce and stir. Add the green onions and cook for 2 – 3 minutes.
Serving
12 large Romaine lettuce leaves, rinsed and patted dry
carrots julienned
green onions thinly sliced
toasted seasame seeds
Serve “beef” with lettuce leaves, carrots, green onion, and peanut butter dip.
