2 filets of red snapper
Olive oil spray
Seasoning mix
2 teaspoons paprika
1 teaspoon oregano
1 teaspoon thyme
½ teaspoon cayenne
½ teaspoon salt
1 teaspoon black pepper
Thaw the fish and spray with olive oil. Combine the spices in a small bowl. Sprinkle one teaspoon of seasoning mix over the filet. To cook immediately spray with a little more olive oil. If there is time cover and refrigerate for 30 minutes.
Over medium high heat allow the grill pan to warm up. Place the filets seasoned side down on the hot pan. Gently press the filets into the grill pan. Cook until the filet releases easily. Flip and cook the other side until the internal temperature is 145 F.
Use the remaining seasoning on other fish fillets and on shrimp and scallops too.
Blackened red snapper is good with Red beans and rice.
