Fig, goat cheese and arugula pizza

1 10 inch Neapolitan style Pizza Crust prebaked for 6 minutes

2 medium yellow onions, thinly sliced

½ cup balsamic vinegar

3 or 4 figs, thinly sliced

2 or 3 ounces goat cheese

1 cup arugula

olive oil

If using dried figs soak them in water for 25 minutes then drain and cook them in boiling water for 5 minutes more. Drain well and slice.

In a medium saucepan, heat 1 tablespoon of olive oil. Add the sliced onions and cook over medium low heat stirring occasionally until the onions are soft and golden in color. This will take 45 to 60 minutes.

In a small saucepan over medium low heat cook the balsamic vinegar until thickened and reduced by half. This will take about 10 minutes.

Brush the prebaked pizza crust with a little olive oil covering completely. Spread the onions evenly over the crust leaving a small edge. Layer the figs over the onions and crumble the goat cheese over the figs. Bake in a preheated 450° oven on a pizza stone or upside down sheet pan for 8 minutes or until the crust is golden brown. Remove from the oven and cool for 3 minutes on a cooling rack.

Top with arugula and drizzle the balsamic vinegar over the pizza. Using scissors cut into 6 slices.
