Pasta Primavera with grilled Italian sausage

½ recipe Roasted vegetables

1 ½ cups cooked pasta such as fusilli

1 cup pasta sauce

2 Italian sausages such as a mild Italian chicken sausage

Preheat a grill pan on medium high heat.

Cook the sausages until a meat thermometer reads 165° when inserted into the center of each sausage. Turn the sausages a few time while cooking and adjust the heat to allow the sausages to brown and develop grill marks on all sides.

Warm the pasta sauce in a small pot.

Layer the pasta, roasted vegetables and pasta sauce in a plate. Top with a grilled sausage. Makes 2 servings.
