Pesto Chicken Pizza

If you have sourdough starter this recipe from King Arthur Baking is my favorite pizza dough. I make 2 (12 inch) pizzas and use my bread machine to mix and for the first rise.

If you don’t have sourdough starter this works too: ½ recipe Pizza dough

Topping the pizza

1 cup pesto

1 teaspoon red pepper flakes

Rotisserie chicken, cubed or shredded

feta

shredded Parmigiano-Reggiano

shredded pecorino Romano 

Onto the partially baked crust evenly spread the pesto. Sprinkle with the red pepper flakes. Spread the chicken then the feta, Parmigiano-Reggiano and Romano over the pizza.

Bake at 450° for 12 minutes or until the cheese is melted and lightly browned.  Remove from the oven and cool for a few minutes.  Slice and serve.  Makes 6 slices.
