Lemon Meringue Pie

For the filling use this lemon pie filling or alternatively use this lemon curd made in your microwave recipe from Southern Living if you don’t have cornstarch or if you are in a hurry.

1 baked pie crust (use a deep dish 8 inch pie pan or a 9 inch pie pan)

Meringue

Spoon the prepared filling of your choice into the baked pie crust.

Spread the meringue over the hot filling and bake the pie at 325° for 20 to 25 minutes or until the meringue is lightly browned. Let cool to room temperature then refrigerate. Serve cold.
