Rotisserie Chicken Salad

2 cups shredded or diced rotisserie chicken

½ apple, diced

¼  medium sweet onion, diced

½ cup toasted pecans, chopped

3 tablespoons mayonnaise

1 tablespoon dijon mustard

2 tablespoons lemon juice

Fresh ground pepper to taste

Toss the chicken, apple, onions and pecans in a bowl.

In another bowl mix mayonnaise, mustard, lemon juice and pepper.

Pour the dressing over the chicken mixture and stir to combine.

Serve on whole grain or sourdough bread with lettuce, tomato, red onion and mayonnaise.
