1 7 oz tin albacore packed in water, drained
3 tablespoons mayonnaise
1 tablespoon Dijon mustard
2 tablespoons lemon juice
1 tablespoon bread and butter pickles, diced
Black pepper to taste
Put all ingredients in a small bowl and stir to combine.
Serve on lightly toasted whole grain bread with spring mix, tomato slices and a teaspoon of mayonnaise.
