Use this King Arthur Baking recipe with bread flour instead of all purpose flour and vital wheat gluten. Mix and knead using your bread machine then place in a lightly oiled bowl to rise. When ready to bake spray with olive oil if desired and add a pan of ice cubes to the bottom of the oven to create steam while baking. Check the loaves after 15 minutes.
Use olive oil if you want a deeper brown crust that is less crisp. The softer crust is good for sandwiches.
Skip the olive oil for a crisper crust and bread that is good sliced or torn with butter or a little cheese.
The recipe makes six baguettes.
