Adapted from Chocolate Fantasy Cookies recipe from a Callebaut chocolate bar
½ pound semisweet chocolate chips
½ pound dark chocolate
¼ cup butter
4 eggs
1 ¼ cups sugar
½ cup flour
½ teaspoon baking powder
¼ teaspoon salt
1 pound white chocolate
Preheat the oven to 350°.
Chop the dark chocolate into large chunks. Melt the semisweet and dark chocolates and the butter in the microwave at 80% power for 45 seconds. Stir and continue microwaving at 80% power until melted.
Whisk the eggs then stir into the chocolate and butter mixture.
Sift the sugar, flour, baking powder and salt and add to the egg and chocolate mixture.
Chop the white chocolate into large chunks and stir into the cookie dough.
Drop by heaping teaspoonfuls onto a baking sheet with at least 2 inches between cookies.
Bake for 8 minutes. Rotate the pans and continue baking for 4 minutes or until set.
You can freeze the dough in a log wrapped in wax paper then wrapped in plastic wrap and finally wrapped in foil. When you are ready to bake the remaining cookies thaw the dough then slice and form into a ball. Bake as usual. You can bake frozen slices if you are in a hurry. The frozen dough can be hard to slice.
